Sodium Bisulphite (NaHSO₃, Food Grade) is a high-purity food additive widely used in the food industry as a preservative, antioxidant, and bleaching agent. It appears as a white crystalline powder with a mild sulfur dioxide odor. When exposed to air, some sulfur dioxide may be released and the compound gradually oxidizes to form sulfate.
This compound is effective in inhibiting microbial growth such as bacteria and molds, thereby extending the shelf life of various food products. It disrupts microbial metabolism and damages cell membranes, preventing spoilage.
As a reducing agent, Sodium Bisulphite reacts with oxygen to form sulfite ions, reducing oxygen availability in food. This antioxidative property protects lipids and vitamins from oxidative degradation, maintaining food quality and freshness. Additionally, it can act as a bleaching agent, lightening pigments in food products to enhance visual appeal and overall presentation.

- Operators should wear dust masks, chemical safety glasses, protective clothing and gloves; leak emergency treatment equipment should be available
- Shelf life: Store in cool, dry conditions, avoid contamination and moisture
